The Landmark London’s pastry team win Bake Off: The Professionals 2023
TALENTED HEAD PASTRY CHEF MAURO DI LIETO, ALONGSIDE HIS PASTRY SOUS CHEF DANIEL SCHEVENELS, ARE CROWNED WINNERS OF NATIONALLY RECOGNISED TV SHOW
The Landmark London’s Head Pastry Chef, Mauro Di Lieto and Pastry Sous Chef, Daniel Schevenels, have been crowned winners of Channel 4’s Bake Off: The Professionals 2023.
Mauro has worked as Head Pastry Chef for over four years at The Landmark London, and has worked alongside Pastry Sous Chef, Daniel, since September 2021. Together they hold upwards of 60 years’ experience in pastry curation and design. Their combined experience and passion have placed them the esteemed winners of one of the UK’s most-loved professional baking competitions.
The winners impressed judges, Benoit Blin and Cherish Finden, in the final with their creations, which included a Chocolate and salted caramel Swiss roll with banana cremaux and peanut butter. The dessert had rave reviews, with Cherish stating, “in this dessert, there is love in every detail.” The pairing was simple and perfectly balanced, boasting a soft and moist sponge with complementary flavours.
Following the win, Mauro, alongside Daniel, has designed a new Afternoon Tea inspired by the winning desserts and pastries they created on the show. Afternoon Tea will be served in the Winter Garden Restaurant under the iconic and soaring eight-storey-high glass atrium that has been at the centre of the hotel since its opening.
